Sydney steak restaurant The Cut Bar & Grill reopens in The Rocks on 20 September, after being closed for four years.
The restaurant, in a heritage-listed cellar in The Rocks, is part of the Hunter St Hospitality group—also behind Rockpool Bar & Grill, Saké Restaurant and Bar, and Spice Temple—with chefs from each venue contributing to The Cut’s relaunch menu.
The slow-roasted prime rib, sliced and served tableside, is back alongside a couple of other cuts of premium local beef, as well as modern takes on steakhouse classics like Eastern Rock lobster in herb butter, John Dory with romesco sauce, and a Borrowdale pork chop with vadouvan butter, all prepared on the wood-fired grill.
Mains are complemented by snacks and small plates including devilled eggs (with optional caviar), roasted scallops in kombu butter, and a prawn cocktail with Green Goddess dressing. Like Rockpool Bar & Grill, a bougie burger also makes an appearance on the lunch menu.
The Cut’s drinks menu shares timeless classics like a signature Gibson, made with house-made Gibson mignonette and oyster shell gin, and served with a Sydney Rock oyster.
While the original exposed brick and wood beams of the site remain, an interior refresh brings new appeal to the much-loved Sydney CBD restaurant.
